Venison Salami Ragu Arancini.

Create risotto from raw – step by step with how to have everything prepared well in advance of your meal or dinner party!

Then Ian will show you how to use your risotto leftovers, creating Venison Salami Ragu Arancini for next-day snacks.

1.00 pm each day: Chef James Broad

Chef James Broad has decades of experience at every level of the industry, working in kitchens internationally and as a passionate Chef trainer.

James runs the Te Pahi cook school as well as providing temp Chef services and helping the local food scene by sharing his expertise with his hospitality advice service.

It’s avocado and asparagus season! We’re loving these green goodies with a delicious asparagus dish and his top tips with avocado.

Smoked salmon and asparagus spring salad.

Top tips and advice with avocado.

2.30 pm each day: Carlene Wilson & Chef James Broad

James Broad is also teaming up with the lovely Carlene Wilson, Wine Director at Cult Wine,

Carlene is a certified wine nerd and experienced wine buyer, educator and drinker who is up to date with the latest wine trends and fascinated by the ancient history of wine.

Pairings of common wine styles –  such as bubbly, rose, crisp white, fuller red – with typical and then some unexpected foods. Think white fish with a red wine; or a juicy steak with a light rose – both work but have to be seen (or tasted) to be believed!

James gets on the hibachi charcoal grill to bring out the best in these wines with some delicious parings featuring grilled ingredients with delicious dip or sauce condiments.
