Cooking Class: Brining, Curing & Smoking

A full day class focusing on meat and fish and promoting cooking from scratch, eating seasonally and looking at the paddock to plate ethos.

BRINING, CURING & SMOKING

Here at The Falls Retreat, we operate a nose to tail ethos where we try to utilise lesser known cuts of meat and incorporate different techniques into our menu. We also often cure and smoke fish in order to ensure we don’t compromise on quality and flavour and you too can learn how with a few simple tips and tricks. We will cover the basics of brining, curing and smoking, explain the equipment required and share our recipes for you to recreate at home

The Full Monty Gardening Workshop

Our most comprehensive workshop covering all the fundamentals of growing nutrient dense healthy veggies.

Nurture your passion for gardening on this one day course with our resident gardener, Nicki Murray-Orr. Nicki will teach you a comprehensive range of skills and techniques to get the most out of your veggie gardens. She covers the basics of soil health, planting from seed, pest management, crop rotation, composting and worm farms leaving you brimming with inspiration and practical knowledge.

Your Day

9.30am arrival. Start the day by meeting Nicki and our other attendees and share introductions over a tea or coffee with tasty treats provided by The Falls Retreat kitchen
10am – 11am Gather around in the rustic Bistro Barn for the first workshop session which will cover soil health and planting from seed.
11am – 11.30am Head over to the Falls Retreat glass house for an interactive session – here you get to see behind the scenes and have a hands on experience with planting seedlings.
11.30am  – 1pm Lunch consisting of delicious wood fired pizzas and fresh salads using produce harvested from the gardens. Nicki joins you for lunch so this is your opportunity to pick her brains and ask questions which apply to your own garden.
1pm –2pm Nicki will teach you all you need to know on composting and worm farms, pest management and crop rotation.
2-3pm Head into the Falls Retreat kitchen veggie gardens to visit our compost and worm farm. See first hand the elements of good garden design, companion planting and crop rotation and learn how these can be applied at home.

Timing is approximate and course content may be subject to change.

***This booking payment is non refundable. If customer cancellation is made more than 2 weeks before the event, it can be transferred to an alternative event of same or lesser value ( subject to availability). If cancellation made less than 2 weeks prior to the event date, transfer to a different date/event is not available ( unless we can fill the space). However, we do allow bookings to be transferred to a different person with advance notice.

*COVID POLICY – If the workshop is cancelled or you are not able to attend due to COVID restrictions, we will look to reschedule at a mutually convenient date. Alternatively, a voucher to the equivalent value will be issued which can then be used for an alternative package, product or experience as refunds will not be given.

**Please note that as a hospitality venue we are required to ensure that all guests be double vaccinated whilst we are in red or orange levels and that we will be using the My Vaccine Pass system to verify guests vaccination status on arrival, as per the Ministry of Health directive.

The Educated Gardener: Gardening Workshop

Have you got your veggie garden well underway but want to learn how to produce a healthier and more abundant harvest?
Are you interested in the Principles of Permaculture?

Then this course is you! Aimed at those that want to build upon their gardening knowledge, Nicki gives invaluable advice on working with nature to create a garden that is designed appropriately for your landscape, has healthier soils, produces less waste and is more resilient to nature’s extremes. She will go into detail about the design, techniques, bio-intensive planting methods, fertilisers and tools we recommend to get your garden really productive this season. Since applying her methods, we have seen a massive difference in the production of our veggie gardens and now you too can benefit from her skills!

When: Friday 12th November  9.30am – 3.30pm

Bread Making Master Class

This is the second masterclass in the “Sustainability Series” promoting cooking from scratch, eating seasonally and looking at the paddock to plate ethos.

Nothing beats the smell of a freshly baked loaf and its a simple process so why not learn how to make your own sourdough bread at home. Brad will cover the basics of bread making and demystify the process of using a natural leaven. He will share 3 simple bread recipes and provide everyone with a sourdough starter to take home and recreate the magic.

He will also demonstrate the secrets of creating your own pizza dough from scratch with everyone getting the change to roll their own and pop it into the wood fired oven to enjoy for lunch.

Masterclass in Pasta Making

This is the third masterclass in the “Sustainability Series” promoting cooking from scratch, eating seasonally and looking at the paddock to plate ethos.

PASTA MASTERCLASS – FROM ZERO TO HERO

We have been making our own pasta here at The Falls Retreat for years and we have a tried and tested recipe that we will share with you. We will demonstrate and explain the kneading and resting process, show you how to create different types of pasta and cover the different types of tools and equipment required to roll your dough and create your very own pasta. Taste the difference and you will never want to go back to the packet version!

Pickling & Preserving & Fermenting Masterclass

This is the first masterclass in the “Sustainability Series” promoting cooking from scratch, eating seasonally and looking at the paddock to plate ethos.

Come and enjoy our cooking class on pickling and preserving. Identify fruit and veggies from our organic gardens and learn how we utilise excess seasonal produce to create our own range of pickles, chutneys, jams and sambal. Brad will cover the types of fruit and vegetables that can be preserved, what blends of vinegars and herbs to use when you pickle and his top tips for successful jam making. He will also share his knowledge of fermenting and show you how we make our fabulous kimchi. Fermenting is a simple process but it needs to be done correctly, and in this workshop you will discover how we can manage microbial bacteria to produce highly nutritious food.

Highlights include:

– Learn how to utilise excess produce to make chutney & pickles
– Discover Brads tops ticks for making and jarring jam
– Learn secrets of the Bistro kitchen and recreate our housemade beetroot chutney
– Find out about the nutritional heath benefits of fermented foods and how to create your own kimchi

Experience our Salad & Dressings masterclass that takes you from the garden to the dinner table no matter what the season. Enjoy a full day workshop including an interactive session in our kitchen veggie gardens and a cooking demo where you will watch and learn how to create a range of salads and dressings with the wow factor using seasonal produce.
